A Bowl of Veggie Ayurveda Goodness

This dish really depends on what veggies you have in, or ones that you particularly enjoy.

Choose a variety of different ones and make sure you have at least 4 different types in different colours to make your bowl look deliciously appetising.

Lots of lovely herbs and spices to make this bowl very yummy.

Ingredients

  • 1 Each of a selection of small to medium size of veg, slice and cut your veg in small chunks or slices. Always add veggies with different textures and I like to add mung beans sprouts for crunchiness.
  • 4 Tablespoons of olive oil
  • 2 Spring onions chopped
  • 1 Teaspoon of cumin seeds
  • 1 Teaspoon of good quality salt
  • 2 Teaspoons of coconut sugar
  • 2 Tablespoons of Bragg amino  or soy sauce, a good alternative that I like to use is Marmite
  • 2 Teaspoons of cornflower mixed into a cup of veggie stock, I use Marigold bouillion
  • 1 Teaspoon of toasted sesame seed oil, you can buy this in most supermarkets

Directions

Heat the oil in a wok or wide pan and fry the spring onions, then add the veggies and fry for a few minutes, tossing them so they don't stick and cook them through. Add the remaining ingredients and bring to the boil, simmer for a few minutes and leaving veg cooked but firm.

Add toasted sesame seed oil and todd together, serve in bowls with rice crackers.
