Sweet Potatoes, Kale & Ginger Hash

Ayurveda loves sweet potatoes, they are wonderful for helping us to feel nurtured and nourished, they are considered a great Kapha balancing food and perfect for the cold winter season.

This is a delicious recipe and really easy to make and so full of goodness.

Sweet potatoes are a lighter food than most other foods that we chose when we need something more substantial and they are kind to the digestive system, they are rich in complex carbohydrates so they are less likely to add extra weight if you are careful in quantities.

Kapha should be mindful of how much they eat.


  • 1 Large sweet potato, peeled and cut really finely, into slithers or coarse grated
  • 2 Spring onions cut finely
  • A handful of kale, remove stalks and finely cut
  • A red pepper sliced and chopped finely
  • A teaspoon of cumin
  • A teaspoon of turmeric
  • A thumb size of fresh ginger finely grated
  • A teaspoon of energy flakes
  • Large pinch of chili flakes
  • A drizzle of soy sauce
  • Salt & Pepper to taste
  • 4 tablespoons of Olive oil


Heat the oil until it is hot then add the sweet potatoes, red pepper, and all the spices cook for about 15 mins, tossing occasionally until the potato is cooked through.

Add the kale and toss until soft, add extra oil if needed, hash wants to be thick, gloopy and sticky, taste for seasoning. 

Add soy sauce at the end.

Serve with green beans or mixed veg, very yummy.
