Sweet Potato & Paneer Curry

Sweet Potato & Paneer Curry

Everyone likes a curry and especially in the winter season. You will find lots of masala recipes on this site but I've included a simple curry mix, so easy to make and keep in a jar to use again.

  • 2 Tablespoons ground cumin.
  • 2 Tablespoons ground coriander.
  • A teaspoon of turmeric.
  • Half teaspoon cayenne pepper.
  • Half a teaspoon mustard seed.
  • A tablespoon of fresh ginger grated or half if powdered
  • Half a teaspoon of asafoetida
  • Half a teaspoon of chili flakes
  • 1 Tablespoon of ghee
  • A couple of cups of water approx
  • A can of coconut milk
  • 1 Large sweet potato cut into med chunks
  • 2 Carrots sliced thinly
  • A handful of green peas
  • 1 Pack of paneer cut into medium cubes
  • A tablespoon or 2 of almond flour for thickness and texture, also adds sweetness, this is optional but I love it.

Heat the ghee when hot add all the spices and cook for a couple of mins until fragrant and mustard seeds have popped.
Add the coconut milk and infuse the spices.

Add the carrots and peas, leaving the sweet potato until carrots have cooked through about 7 mins, you don't want the sweet potato to go too soft and mushy.
Then add the sweet potato and paneer adding water to cover and simmer for 10 to 15 mins.

Serve with rice, quinoa or bread.
