Kidney Beans & Cumin Stew
Another delicious winter warmer and using cumin means that you get lots o health benefits, too many to mention but here's a few cumin particularly promotes a healthy digestion and is a rich source of iron.
Cumin contains many beneficial plant compounds. It is said that cumin could help with diabetes and blood pressure.
Cumin is a great winter warmer herb and is good for all dosha types. This recipe has chili flakes so for Pitta types its a good idea to reduce the amount if you are a high pitta as the chili will add more heat leading to aggravation.
Ingredients
- 2 tins of kidney beans, washed
- 1 beetroot peeled and chopped
- 1 large potato peeled and chopped
- 1 large carrot peeled and chopped
- A teaspoon of chili flakes
- A heaped teaspoon of freshly ground cumin seeds
- A quarter of a teaspoon of cayenne pepper
- 1 Garlic clove grated
- 1 medium onion chopped
- Half a teaspoon of salt
- A quarter teaspoon freshly ground pepper
- A tablespoon of ghee
- 1 teaspoon of bouillion
- Coriander leaves for serving
Directions
Put spuds, carrots, and beetroot and bouillion into a pan and cover with water, bring to the boil, add the salt and pepper and simmer for 15 mins, then add the beans.
Add more water if needed
In the meantime heat the ghee and add the spices and fry until fragrant and the onion is translucent.
Add the spice mix to the pan and cook until all the veg is cooked through about 15 mins.
Add chopped coriander leaves to each bowl
